Gegicak Recipe, Glutinous Rice Orecchietti Style.

Gegicak is a typical food of the Banjar people, South Kalimantan.

This food is recognized by it's appearance, which is green in color and has a small round shape like a bottle cap. The main ingredient for making this food is glutinous rice flour so that it produces a chewy texture. Apart from that, this food is also usually eaten with unti or grated coconut mixed with brown sugar.

The texture and taste of this traditional Banjar food is almost similar to Klepon, both are chewy, sweet, and savory. If klepon is filled with brown sugar and it is cooked by boiling, while the Gegicak is steamed, the presentation is poured over with brown sugar syrup.

INGREDIENT :

200 g White glutinous rice flour

1/4 tsp Salt 

175 ml Water

50 ml Suji water + 5 droplet green colorant 

1 tbs Slaked lime water

1 recipe Grated coconut garnish 

1 recipe Palm sugar syrup

1-2 Banana leaves


HOW TO MAKE:

1. Mix glutinous rice, slaked lime and suji water. Pour in water gradually, kneading to a smooth and pliable dough.

2. Make small balls in marble size, arrange them on a baking tray, layered with oiled banana leaf. Make sure there is enough distance in between. Press the ball center with finger, to make an indent.

3. Steam dough balls with the lit slightly ajar for 10 minutes until cooked. Remove from heat. Serve with Kinca or Palm sugar syrup, and sprinkled with grated coconut.
