Wajik Recipe, Sweet Glutinous Rice Snack.

Wajik is sweet glutinous rice snack. It is made from steamed glutinous rice and then cooked with a mixture of coconut milk and sugar until oily and soft. The sugar used in this type of wajik is usually brown sugar/ gula aren. The brown sugar used will make the wajik light brown to dark brown. After the wajik are removed from the processing site, wajik will then be shaped or sliced according to the maker's wishes.

The shape that usually made is a rhombus or parallelogram shape. Wajik cake usually also smells good because it uses pandan leaves in its processing. The type of sticky rice wajik besides brown, there are also those that have other colors, such as green and pink. The green color in wajik cake comes from natural dyes, namely suji leaf juice, while the pink color can be obtained from food coloring. Wajik are green and pink doesn't use brown sugar but uses granulated sugar. 

Wajik have a legit sweet taste. The sweet taste is often added with other aromas such as pandan and vanilla flavors. Wajik has a texture like uncooked rice but when eaten it will feel soft and easy to bite.

WAJIK RECIPE


for 10-12 pieces 

Ingredient :


500 g White glutinous rice, soaked in water for 2 hours, drain 

350 ml Coconut milk 

200 g Palm sugar

2 tbs Sugar

3 Pandan leaves, shredded and tied into a knot 


How to make :


1. Steam glutinous rice for 15 minutes, remove from heat and set aside. 

2. Boil together coconut milk, palm sugar, sugar and pandan leaves until thick and oily. 

3. Add glutinous rice, simmer until coconut milk is completely absorbed and rice is ready. 

4. Keep stirring while cooking, so palm sugar colour distributes evenly, and rice is not burnt with grain intact.

5. Put in cooked mixture in a 20×20 cm tin, press to level the surface. 

6. Leave to cool before slicing as preferred.
