LEMPER AYU RECIPE
for 20-25 pieces
Ingredient :
500 g White glutinous rice, soaked in water for 2-3 hours minimum, drained
200 ml Coconut milk, from 1 coconut
1 tsp Salt
2 Pandan leaves, tied into a knot
Filling :
½ kg Chicken, boiled until tender, shredded and finely sliced
200 ml coconut milk
1 bay Leaf
1 stalk Lemongrass, crushed
Ground spices :
3 cloves Garlic
6 Shallots
1 tsp Coriander
½ tsp Aromatic ginger
2 Candlenuts, fried without oil
½ tsp Salt
2-3 tsp Palm sugar
How to make :
1. Saute ground spices until fragrant, add chicken, bay leaf and lemongrass. Cook until mixture is no longer watery, remove from heat and leave to cool.
2. Steam together pandan leaves and glutinous rice until half cooked, transfer to another pan.
3. Add coconut milk and salt. Boil on low heat until coconut milk is fully absorbed. Steam again until rice is completely cooked.
4. When still steaming hot, level and flatten steamed glutinous rice to 1 cm thickness. Cut to 6×8 cm rectangles.
5. Place 1 tbs filling on a rice rectangle, fold in two, and shape into a compact oval shape. Wrap with banana leaf.
6. Lemper ready to serve.
