Putri Selat Recipe, Princess Layer Cake.

Putri Selat is a traditional cake typical of the Banjar people in South Kalimantan. This cake consist  of 3 layers with each layer having its own taste. In general, the bottom layer consist of the basic ingredients of flour dough and grated coconut, the middle layer is made of brown sugar dough and the top layer is made of suji leaves and is green in color. So that is gives a sweet, savory and legit taste in one piece.

This cake is usually found in the month of Ramadhan as a takjil menu for breaking the fast. Apart from South Kalimantan, this cake can also be found in Sumatra, Malaysia, and Singapore.

Okay, let's make this cake for our self now! 


For 30 pieces

INGREDIENT :

Green layer ingredient :

175 g Rice flour

25 g Tapioca flour

150 ml Warm coconut milk

450 ml boiling coconut milk

50 ml Suji water

100 g Sugar 

1/4 tsp Salt

Brown layer ingredient :

175 g Rice flour

25 g Tapioca flour

150 ml Warm coconut milk

400 ml Boiling coconut milk

200 Palm sugar, finely sliced

50 g Sugar

1/4 tsp Salt


White layer ingredient :

175 g Rice flour

400 ml Thick coconut milk

1/4 tsp Salt


Other :

Banana leaves


HOW TO MAKE :

1. Green layer: Mix thoroughly rice flour, tapioca flour, sugar, salt and warm coconut milk. Stir while pouring suji water and boiling coconut milk. Set aside.

2. Brown layer: Mix thoroughly rice flour, tapioca flour, sugar, salt, and warm coconut milk. Stir while pouring in boiling coconut milk. Keep stirring until all sugar is fully dissolved.

3. White layer: Mix and stir all ingredient into a smooth and soft mixture.

4. Grease a 22*22*8 cm tin with oil, and layer with banana leaf. Pour in the green mixture, and steam for 10 minutes until the surface is set. Repeat in similar fashion with brown  and white mixture.

5. Finally steam the whole cake for 60 minutes until cooked. Leave to cool before slicing
