Awug-awug is a type of traditional Indonesian food which is included in the market snack group. This food has other names such as Awuk-awuk, Dodongkal, and Dongkal.
Dongkal or awug-awug is made from finely ground rice to produce flour. Then the refined rice flour is filled with palm sugar and steamed.
Awug-awug is usually served on a banana leaf and sprinkled grated coconut on top. And this food included in the Indonesian maerket snack food which is getting scarce.
And this time we will make this traditional food for you to follow, here is the recipe :
INGREDIENT :
250 g Glutinous rice flour, soaked for 2-3 hour, drained and finely pounded
150 g Grated young coconut
200 g Brown sugar, finely sliced
1/2 tsp Salt
1/2 tsp Vanili
Banana leaves and toothpicks
HOW TO MAKE :
1. Except brown sugar, mix all ingredient together.
2. Take a banana leaf of 8-10 cm width, fold to make a cone with large opening. Fill with 2 tbs glutinous rice mixture and make an indent in the center.
3. Fill indent with 1 tsp full of brown sugar and cover with 2 tbs glutinous rice mixture.
4. Tidy and compact the sugar filling, making sure it is well covered with glutinous rice, so it will not seep out during cooking.
5. Fold and slip in unused leaf to the center, so the parcel resembles a cone or pyramid. Secure with toothpick if needed.
6. Steam for 30 minutes until dense and cooked, serve with a glass of tea.
