Cucur Recipe, Palm Sugar Pancakes.

What do you know about Kue Cucur? Kue Cucur is a typical snack of the Betawi tribe originating from the western region of island of Java.  This cake is made from fried rice flour and palm sugar. Cucur cake has a shape that tends to be thick and bulging like the middle and thin on the edges.

The original taste and texture of the cucur cake is sweet, savory, sticky in the middle and crunchy on the edges.

Cucur cake is a wet food that is easy to find, both in traditional markets and large supermarkets. The price is quite affordable and the ingredient that are easy to get make it, easy for us to try it ourselves at home. 

This time we will share how to make a sweet, savory, and chewy cucur cake like the ones you have bought. Lets follow the following recipe :


INGREDIENT :

220 g Rice flour

250 ml Water

200 g Palm sugar/gula merah



HOW TO MAKE :


1. Mix rice flour and palm sugar, add water and knead whilst pounding by hand for 10 minutes, until the mixture feels light and smooth.

2. Heat 100 ml oil in a wok on medium heat. Pour in 35 ml or 3 tbs mixture, and splash repeatedly with oil until crisp.

3. Flip the pancake over several times. Lift out when it is coked and fully expanded, then drain.

4. Kue Cucur ready to serve with a glass of tea.
