Serabi Juruh Recipe, Rice Pancake With Sweet Coconut Sauce.

Serabi is a traditional snack originating from Indonesia which is thought to have been known since the days of Mataram Kingdom.

The basic ingredient for making serabi are rice flour, coconut milk and salt. Another variation is sweet  serabi with sugar, flavored with pandan or vanilla. Traditional, in many places in Java and Lampung, Serabi are cooked in small clay pots and roasted over a charcoal or wood fire. Meanwhile, modern serabi, such as in Solo, are cooked using a small frying pan.

This cake has a soft texture and sweet taste. Serabi tastes sweet mixed with savory because of the additional of coconut milk. 

Serabi are usually sold in the morning and cooked using a stove to produce a distinctive taste. Sometime a beaten chicken egg is added to the serabi mix that is bring cooked.

Along with the times, more people want to make their own food both for sale and to eat alone with their families. This time, we will share Serabi recipe that turn out to be easy to make and taste that wont dissapoint you. So, follow the recipes below :


INGREDIENT :

250 g Rice flour 
 
150 g Grated coconut

1/2 tsp Salt

600 ml Thin coconut milk

1-2 Candlenuts, pounded and wrapped in a clean cloth 


Sweet coconut sauce / Juruh :

500 ml coconut milk

200 g Palm sugar/ Gula merah, finely slice

2 tbs Sugar 

1/4 tsp Salt 

2 knotted Pandan leaves


HOW TO MAKE :


1. Pour in coconut milk into a pan. Add finely sliced palm sugar, sugar, salt, and pandan leaves.

2. Bring to boil on low heat ,stirring from time to time. When it boils, reduce the heat and continue stirring for another 5 minutes until boiling. Set aside.

3.Mix flour, grated coconut and salt. Knead while pouring in coconut milk a little each time until all ingredient are well combined.

4.Pound dough repeatedly until it feels smooth and soft.

5. Heat the serabi wok until very hot, and then brush the surface with candlenut pouch all over to make it oily.

6. Pour in 3-4 tbs mixture and leaves to cook. When holes start to appear on the pancake surface, put the lid on and toast until cooked. 

7. Serve Serabi with Sweet coconut sauce/Juruh.
