Meniran Recipe, Steamed Coconut Rice in Banana Leaves.

 


Hello everyone...

In the old days, harvested rice was prepared by pounding with lesung (large wooden pestle and mortar). This process resulted in bits of crushed rice called 'menir', which would be sold at a cheap price. Nowadays machine have a replaced the use of lesung, and therefore menir rice is no longer available for sale. Simply use normal rice for Meniran recipe bellow and serve this with some abon (beef/fish floss), sprinkles or other dry side dishes.

Meniran is a traditional food made from rice cooked with coconut milk and wrapped in banana leaves. It tastes delicious because there is coconut milk and added chicken in it make anyone like this one food. Including those of you who just found out about this food, you have to try it at home!! Follow the step bellow!


Meniran Recipe

for 8-12 pound 

Ingredient:


200 g Rice, soaked in water overnight 

250 ml Thick coconut milk 

350 ml Thin coconut milk

1 tsp Salt

3 Pandan leaves, cut to 5 cm lengths 

Banana leaves and toothpicks 


How to make :


1. Drain rice and pound coarsely. 

2. Cook pounded rice toghether with thin coconut milk and ¼ tsp salt. When coconut milk is fully absorbed, remove from heat and leave to cool. 

3. Devide into 8-12 portions and set aside.

4. Mix thick coconut milk with the rest of salt and set aside.

5. Make a pincuk with banana leaf. Place inside 2 tbs thick coconut milk, 1-2 pieces of pandan  leaves and 1 portion of rice.

6. Wrap and secure with toothpicks 

7. Steam for 30 minutes until fully cooked.

8. Meniran ready to serve.
