Kue Kacamata Recipe, Glasses Cake.




Hello everyone...
Glasses cake or Kue Kacamata is an original food from Indonesia. This one food is made from finely grated cassava and added sugar to add sweetnes, then filled with bananas and covered with grated coconut to make it

KUE KACAMATA RECIPE 


For 20 slices 


Ingredient :


2-3 Very ripe plantains 

500 g Cassava, grated

½ Young coconut, grated 

50 ml Thick coconut milk 

100 g Sugar 

¼ tsp Salt 

¼ tsp Vanilla essence 

Colourants 

Banana Leaves, toothpicks 

Grated coconut garnish

How to make :


1. Mix grated cassava, young coconut, sugar, thick coconut milk, vanilla, salt evenly. 

2. Divide into 3 parts and colour as preferred.

3. Take a banana leaf and put 3 tbs cassava  mixture along the middle. Put 1 whole banana on top, and cover with cassava mixture again. 

4. Wrap and roll, secure both ends with toothpicks. Repeat with other coloured mixtures.

5. Steam until cooked for 1 hour. Leave to cool, slice diagonally and roll on grated coconut garnish to coat before serving.
