Onde-onde is a kind of market snack cake which is famous in Indonesia. Onde-onde id easy to find in traditional markets and sold at street vendors. Onde-onde is also famous, especially in Chinatown areas both in Indonesia and aboard.
Onde-onde is made from wheat flour or glutinous rice flour which is fried or boiled and the surface is sprinkled with sesame seeds. There are various variations, the best known is the onde-onde which is made from glutinous rice flour and filled with mung bean pasta inside.
Another variations is made from wheat flour and given a color on surface such as white, red or green which is known as wheat dumplings, which are typical dumplings from the city of Mojokerto, East Java.
Let's follow these steps bellow to make this delicious Onde-onde :
INGRIDIENTS :
250 g Glutinous rice flour
25 g Tapioca flour
100 g White sesame seeds
175 ml Warm coconut milk
1/4 tsp Salt
FILLING :
200 g Mung beans, skinned
50 ml Water/coconut milk
150 g Sugar
1 Pandan leaf/ vanilla essense
Split and scrapped
HOW TO MAKE :
1. Soak mung beans in water for 1 hour. Steam until cooked, and mash while still hot.
2. Add sugar, pandan leaf, water/coconut milk and simmer over low heat while stirring.
3. Cook until mixture is thick enough to shape, similar to paste. Remove from the heat, leave to cool and make 12 balls of marble size. Set aside.
4. Combine all flour and salt. Pour in warm coconut milk gradually, kneading at the same time to form a smooth dough. Make 12 balls.
5. Take a dough balls and flatten, fill with a mung bean ball. Roll back into a ball. Then roll on sesame seeds to coat, pressing slightly so seeds stick properly. Alternatively, dip the ball quickly in a bowl of water to damp the surface and roll on sesame seeds. Make sure to coat the entire surface with seeds.
6. Fry in plenty of oil on medium heat. Take care that the heat is not too high, as this would cause fried balls to rupture and split. Fry until cooked and golden brown all over.
7. Onde-onde ready to serve.
